I’m very happy to have been asked by Martin Lersch from Khymos.org to host round #9 of the well established ‘They Go Really Well Together‘ foodblogging event, where you create a recipe that pairs two (or three) ingredients that are not usually seen together. The theory is that if two ingredients have chemical compounds in common, then they should go well together in a recipe. With the blogging event we get to put the theory in practice. In der siebten Auflage des TGRWT (they go really well together food blogging event) geht es um die Kombination der Aromen von  Blumenkohl & Kakao. Der event wird durch Papin von flavor alchemy gehostet. Ich mache eine Gemüse-Terrine mit karamelisierten Blumenkohlröschen, die in eine ungesüsste Schokoladen-Royale (Schoko-Eierstich) eingebettet sind. Die beiden Komponenten passen durchaus zusammen, aber es resultieren weder Geschmacks-Synergien noch -Kontraste. zum Rezept Weiterlesen

They go really well together food blogging event (TGRWT) is all about flavour pairing, that is combining ingredients and flavours that wouldn’t usually be put together and seeing how it turns out. Ingredients to pair this time are: cauliflower & cocoa. The seventh event (TGRWT #7) is hosted by Papin at flavor alchemy. My contribution is roasted cauliflower embedded by chocolate-royale made from dark, unsweetened chocolate, cream and eggs. Cauliflower and cacao: In my opinion a difficult combination. They go well together, but I found neither synergy nor contrast between the both components in my dish. Recipe Weiterlesen

They go really well together food blogging event (TGRWT) is all about flavour pairing, that is combining ingredients and flavours that wouldn’t usually be put together and seeing how it turns out. Ingredients to pair this time are: Apple & Lavender. For the sixth event (TGRWT #6), hosted by Inge at vanielje kitchen, I present an apple-lavender sorbet with a sensational taste, served with crispy dried slices of apples. To tell you the truth, the sorbet is not blue, rather dusky pink. Blue is my T-shirt beneath the dish.

In der sechsten Auflage des TGRWT (They go really well together food blogging event) geht es um die Kombination der Aromen von: Apfel & Lavendel. Der Event wird durch Inge von vanielje kitchen gehostet. Ich mache ein elegantes Apfel-Lavendelsorbet mit einem unglaublich guten, leicht altmodischen Geschmack, serviert mit knusprigen Apfelchips. Das Sorbet ist, offen gestanden, nicht blau, eher alt-rosa. Blau ist mein T-shirt, das unter dem Glasteller liegt.

Ingredients to pair this time are MUSTARD with MINT. For the fourth event (TGRWT #4), hosted by Dennis of Kookjegek, I present a light mustard-mint-sauce, served to cold cuts of veal. Perfectly fitting to warm summer evenings. Blog-Event TGRWT #4Dennis aus Holland von Kookjegek hat das hosting der neuesten Runde des food-pairing events übernommen. Diesmal geht es darum SENF mit MINZE zu kombinieren.

Dennis schreibt: “I’m happy to announce that Martin from Khymos.org has asked me to host the 4th round of the foodblogging event ‘They Go Really Well Together‘. TGRWT is all about combining ingredients people might consider out of the ordinary. But the combinations are not just randomly chosen. The theory behind this is that ingredients with similar volatile aroma compounds should go really well together. But this is just theory. We want to test this by trying them out in dishes, and you can participate!”
